Local chef Jeff Suddaby, from 3 Guys and a Stove, shares his delicious rub recipe for whitefish with Pure Muskoka.
INGREDIENTS
- 4- 6-10 oz fillets of fresh whitefish
- 2oz Vegetable oil (for frying)
- ½ cup rub(recipe below)
- 2 Lemons (cut in half)
METHOD
- Pour oil into frying pan and heat
- Dredge each piece of whitefish through the rub and place into frying pan flesh side down and let
- Sear for approximately 3 minutes
- Flip fish and let it continue to cook for 3 minutes
- Only flip once to ensure your fish does not break apart
- Squish fish with lemon and serve
3 PEPPER RUB
INGREDIENTS
- 2 Tbl cracked black pepper
- 2 Tbl cayenne pepper
- 2 Tbl white pepper
- 1 Tsp dried basil
- 1 Tsp dried Oregano
- 1 Tsp dried Mustard
- 1 Tsp Paprika
- 3 Buds Fresh Garlic
METHOD
- Peel garlic and crush
- Add to mixing bowl all ingredients and mix
- Wrap and store in refrigerator until ready to use
